Zucchini and Parsnip Nests
I’m a savory breakfast eater, but that can get kinda boring sometimes. So I have to come up with fun ways of eating a veggie so it’s not just, ya know, a veggie. Using a spiralizer is the perfect way to do that! I still get the fiber to keep me full + the egg adds protein and healthy fats.
Not pictured is a slice of toast and some fruit. Creating meals that are balanced helps our blood sugar stay level throughout the day. More importantly, our bodies avoid that dip in energy which keeps us from craving those simple carbohydrates that can be turned to energy quickly, but do not have longevity. Give it a go!!
Spiralize a zucchini + parsnip, arrange into little “nests”
Cook over low heat in a well oiled pan
Add onion powder + chili flakes + pepper + avo
Add an egg your favorite way {the juicier the better}
This nest can even be created using a sweet potato or yam for different flavors and consistency!
