Breakfast Bowls
Something about a bowl takes breakfast to a cozier and more delicious level. I'm not much of a sweet tooth in the morning, so for me, my breakfasts need to be savory. More importantly, they need to be filling and balanced. Since I am usually on the go {and eating breakfast in my car}, I like to meal prep to save time and ensure I have the nutrients I need to get through the day.
My go to breakfasts usually include veggies, an egg, avocado, and a slice of toast. I put it in a bowl because it keeps it all together and brings me a little joy.
Breakfast Bowl:
1/2 cup sweet potatoes
1/2 zucchini
1/4 cup red onions
1/2 cup mushrooms
1-2 carrots sliced
Roast at 425 degrees for 12 minutes, add turmeric + pepper + garlic powder, stir & flip, and finish roasting for 10-12 more minutes {depending on how al dente you like your veggies}
Top with an egg {or two}, some avo, and your favorite hot sauce. Let the bowl warm your soul and nourish you mind!
