Quinoa Bowl
I need veggies in my breakfast; they’re enough carbs to give me energy, but also packed with fiber to keep me full for longer. I crave them in the morning, but get sick of the same potatoes or toast. So I find a way to switch them up!
This week I’m adding quinoa to them and putting an egg on top!
Cook up your favorite quinoa, I add cumin and garlic salt to the water to give it extra flavor, set aside.
Roast or sauté veggies. This week I used:
Broccoli
Red onion
Mushrooms
Zucchini
Butternut squash
I added garlic powder + paprika + salt and pepper and get a nice lil char.
If you want an added crunch, toss your quinoa into the pan with veggies to give it a lil crunch.
Once cooked, put in a bowl + top with an egg! You can even add avo + hot sauce, or some other protein like sausage or tofu.
I also added sunflower sprouts for a fresh crunchy green flavor.
This is easy to make ahead and reheat so breakfasts (or lunch) are quick and easy!
