Tofu Bowl
This bowl is quick to make and packed full of flavor!
Cook up your favorite grain - brown rice, white rice {not the best, but delicious}, quinoa or farro.
Meanwhile mix up the marinade:
- 2 tablespoon sriracha
- 2 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon syrup
- ~ 2 teaspoon grated ginger
Add in tofu - I use extra firm because it contains less water and wonβt fall apart - and coat. Let sit for about ten minutes.
Slice up your favorite vegetables. For this I used:
- Carrots
- Asparagus
- Ginger
- Garlic
- Fresno pepper
Place tofu on a baking sheet and bake for 10-15 minutes at 425 degrees. While this is baking, add veggies to a pan and saute. I added a splash of rice vinegar for added flavor. Once cooked, remove from heat and set aside.
After baking the tofu, I removed it and put it in the pan I used for the veggies to add some extra color to the outside.
Finally, place grain in a bowl, add cooked veggies + tofu and top with avocado, radishes, and cucumbers for some freshness to balance out the spice!
